Currently, oxidative stability of oils and fats can be determined automatically by two commercially available instruments, the Rancimat from Brinkmann Instrument (Westbury, NY, USA) and the Oxidative Stability Instrument from Omnion, Inc. (Rockland, MA, USA)(Akoh, 1994). The oxidative stability of vegetable oils can also be established by DSC and thermogravimetric methods. The transfer of an oxygen molecule to an unsaturated fatty acid requires energy (exothermic process). Therefore, the oxidative stability of vegetable oils can also be established by DSC techniques.
